Rahat El Halkum
Turkish Delight

Ingredients

1 lb. Sugar

11/2-pints water

1/4-tspn. tartaric acid

3 oz. cornflour

7 oz. icing suga

1/ 2 oz. honey

lemon juice and rosewater to flavour
How to make Rahat El Halkum (Turkish Delight)
Boil sugar and 1/4-pint water until soft ball (240° F.) Add tartaric acid.
Blend icing sugar and cornflour with remaining water.
Boil and beat until thick and clear.
Add syrup gradually.
Boil for 25 — 30 minutes, stirring and adding a few drops of lemon juice.
Mixture should be straw-coloured and transparent.
Add honey and a few drops of rosewater.
Pour half the mixture into a buttered tin.
Colour the remainder pink and pour into another tin.
Cut with a knife.
