Vegan Maritime Patty

INGREDIENTS

3/4 cup diced onion
1 Tbsp. vegan margarine or vegan butter
1 1/2 pounds finely chopped vegan chicken roll
30 Tbsp. vegan mayonnaise
3 1/2 ounces egg substitute
3 1/2 cups plain medium bread crumbs
2 Tbsp. chopped fresh Italian parsley
4 tsp. fresh lemon juice
1/2 tsp. ground paprika
1/8 tsp. garlic powder
1 Tbsp. veggie chicken seasoning
2/3 cup all-purpose flour

Directions

In suitable pan, sauté onions in margarine until transparent and tender. Do not brown. Place veggie chicken in suitable mixing bowl. Using a paddle, mix veggie chicken to a paste. Add all other ingredients except 1 cup of bread crumbs. Mix thoroughly until all ingredients are well blended. Use a number 12 scoop to form into patties. Roll patties in remaining bread crumbs. Grill for approximately 3 minutes or until golden brown.
