Eggplant Steak Nicoise

Serve with sliced tomatoes for a light entree

INGREDIENTS

1 large eggplant
Extra virgin olive oil
1 cup fresh toasted bread crumbs
1 cup finely chopped parsley
4 cloves garlic, finely chopped
salt and freshly ground pepper to taste

METHOD

Cut the eggplant into thick diagonal slices and lay in a well-oiled baking dish. Sprinkle with olive oil.

Combine bread crumbs, parsley and garlic and sprinkle eggplant slices with the mixture. Sprinkle with salt and pepper to taste.

Bake in a preheated 400F oven 30 minutes or until tender. Place under the broiler until sizzling and serve immediately.
