Nut Loaf

This has been a favourite at our family dinners and every year the family carnivores eat with high praise

INGREDIENTS

1 small onion, diced
4 cloves garlic, minced or crushed
1 Tbsp canola oil
2 1/2 cups diced onions, grated carrot, grated celery, grated zucchini, grated squash, grated daikon radish etc.
The use of a food processor to grate vegetables cuts preparation time.
1/2 cup mushrooms, chopped
2 Tbsp. tamari sauce
1 tsp black pepper
1 tsp Italian parsley
1/4 tsp oregano
1 tsp fresh dill
1/4 cup sesame seeds or tahini
1/4 cup pecans, almonds or walnuts
1/2 to 1 cup bread crumbs

1. Saute the onion, then garlic, in the canola oil over the medium low heat until the onions are transparent approximately 5 to 7 minutes.

2. Add the grated carrots, celery, zucchini, daikon, yellow squash and mushrooms and cook over medium heat for about 20 minutes until the liquid has evaporated, stirring every 5 minutes. Add tamari soy sauce, pepper and herbs, and remove from heat.

3. Lightly oil, or use parchment paper to line a 9” X 4” loaf pan. Bake in the oven for 20 minutes at 300 F. Garnish with extra dill or parsley. Serve with a hot, vegan gravy.
