Calzone

Calzone are simply pizzas with the topping on the inside. This mixed vegetable filling is delicious and very interchangeable with other ingredients.

INGREDIENTS

Pizza Dough

4 cups of flour
1 sachet fast rising dried yeast
about 1 1/4 cup warm water

Filling

1 tsp of olive oil
1 red onion, thinly sliced
3 zucchini, sliced
2 large tomatoes, diced
3 tablespoons hummus and 2 tbsp of nutritional yeast
1 tbsp chopped fresh oregano
almond milk, to glaze
salt and freshly ground black pepper
fresh oregano sprigs, to garnish

  • To make the dough, sift the flour and a pinch of salt into a bowl and stir in the yeast. Stir in just enough warm water to mix to a soft but not sticky dough.

  • Knead for 5 minutes until smooth. Cover with a plastic wrap or a dish towel. and leave in a warm place for about 1 hour, or until doubled in size.

  • Meanwhile, make the filling. Heat the oil and saute the onion and zucchini for 3-4 minutes. Remove from the heat and add the tomatoes, hummus mixture, and the oregano and season to taste with salt and pepper. Preheat the oven to 425 F for at least 20 minutes before baking the bread.

  • Knead the dough lightly and divide into four. Roll out each piece on alightly floured surface to an 8 inch round. Place a quarter of the filling on one half of each round. Brush the edges with milk. Fold over the filling. Press the edges firmly. Brush with milk. Bake for about 15 to 20 minutes until golden. Serve, garnished with oregano sprigs.
