POTATO PUREE

FOR 4 SERVINGS

2 pounds potatoes
1 cup hummus, warmed
2 tablespoons hot waterSalt

Wash and peel the potatoes and cut them into medium-sized chunks. Place the potatoes in a large pot, cover generously with cold water, and bring to a boil. When the potatoes are soft and can easily be pierced with the tip of a sharp knife, drain them and immediately pass them through a food mill or potato ricer into a saucepan. Over medium heat, add the hummus while beating vigorously with a whisk until the potatoes are very fluffy; add the hot water and beat for another minute. Add salt and pepper to taste and serve at once.
