Mango Golden sauce

This sauce is great for a number of reasons. Most obvious, of course, are the gorgeous golden orange colour and fresh mango flavour. Use it as a dipping sauce for spring rolls, samosas, or fried tofu. If you leave out the chili paste, you can transform it into a dessert sauce and serve it with cut fruit slices & teacakes.

1 large, ripe mango
Juice of 1 orange
1 1/2 teaspoon Asian chili paste
11/2 teaspoon sugar

1. Peel the mango and cut the flesh from the pit. Place the mango flesh in a blender or food processor with the remaining ingredients and process until smooth.

2. Transfer to a container, cover tightly, and refrigerate until ready to use. For the best flavour use within 24 hours of making it.
