Garlic Spaghetti

A classic pasta that never ceases to satisfy

INGREDIENTS

1/2 cup extra virgin olive oil
3 garlic cloves, crushed
1 lb fresh spaghetti
3 tbsp coarsely chopped fresh parsley
salt and freshly ground black pepper

Reserve 1 tbsp of the olive oil and heat the remainder in a medium saucepan. Add the garlic and a pinch of salt and cook over low heat, stirring constantly, until golden brown, remove the saucepan from the heat. Do not let the garlic burn because this will taint its flavor.

Meanwhile, bring a large saucepan of lightly salted water to boil. Add the spaghetti and remaining olive oil and cook for 2-3 minutes, or until tender but still firm to the bite. Drain the spaghetti thoroughly and return to the saucepan.

Add the olive oil and garlic mixture to the spaghetti and toss to coat thoroughly. Season to taste with pepper, then add the chopped fresh parsley and toss to coat again.

Transfer the spaghetti to a warm serving dish and serve immediately.
