Yellow Pepper Puree

This smooth puree of sweet yellow bell peppers is especially good with grilled or steamed vegetables, but it can also be used to add flavour and colour to soups, salad dressings, or other sauces.

1 tablespoon olive oil
1 small yellow onion, chopped
3 medium size yellow bell peppers, seeded and chopped
1/4 cup water
Salt and freshly ground black pepper

1, Heat the olive oil in a large skillet over medium heat. Add the onion and bell peppers, cover, and cook, stirring a few times, until softened, about 5 minutes. Add the water, season with salt and pepper to taste, and cook until the vegetables are very soft, about 15 minutes.

2. Transfer the cooked vegetables to a food processor or blender and process until smooth.

3. Push the mixture through a fine mesh strainer into a small saucepan and heat over low heat. Use immediately or allow to cool and store in a tightly sealed container until ready to use. Reheat over low heat
