Lemon Poppy Seed Cookies

INGREDIENTS:

1 cup sugar
1 cup brown sugar
1 cup margarine
1 cup soy yogurt
1 3/4 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp lemon zest
2 3/4 cups flour
1/2 cup poppy seeds

Preparation:

Pre-heat oven to 350 degrees.

Mix together the sugar, brown sugar and margarine until smooth and creamy. Add the soy yogurt and vanilla and mix well. Add the remaining ingredients.

Drop by tablespoonfuls onto a cookie sheet and bake for 8-9 minutes, or until done.
