BAKED BANANAS

This an extremely easy dessert to make when there's no time for something more elaborate.

FOR 6 SERVINGS

INGREDIENTS

6 ripe bananas
Juice of 1 orange
6 tablespoons sugar
1 tbsp of vegan margarine or olive oil
4 tablespoon unsalted almond butter
Rum (optional)

Preheat the oven to 350 F.

Oil a baking dish large enough to hold the bananas in one layer. Cut the bananas in half lengthwise and place them in the dish. Pour over the orange juice, sprinkle , with the sugar, and dot with the butter. Place the dish in the oven and bake for 5 to 6 minutes, or until the top is lightly browned and glazed. Sprinkle lightly with rum and serve the bananas warm or at room temperature.
