Onion Tart


INGREDIENTS

10 ounce package vegan pizza base mix
or fresh vegan pizza base
1 teaspoon olive oil, plus extra for drizzling

FOR THE TOPPING

2 tablespoons olive oil
6 onions, thinly sliced
2 garlic cloves, crushed
2-ounce can anchovy fillets, sliced in
half lengthwise(optional)
8 black olives, pitted
2 teaspoons chopped fresh thyme, or
1/2 teaspoon dried thyme
salt & ground fresh pepper

1. Make the topping, heat the oil in a frying pan, add the sliced onions and garlic
and season lightly. Fry gently, stirring occasionally, for about 40 minutes, or until the
onions are soft but not too brown.

2. Preheat the oven to 425F. empty the pizza base into a large bowl, stir in 1 cup of
warm water and add olive oil. Mix to a dough and then turn out, and knead for about 5
minutes.

3. Lightly grease a 13X9 inch jelly roll pan. Roll out the dough on a lightly floured
surface to fit the pan and press into the base. Spread the cooked onions evenly over the
dough and then arrange the anchovies on top in a lattice pattern. Sprinkle over the
olives and chopped thyme and drizzle with a little olive oil. Place in a large sealed
plastic bag and leave to rise in a warm place for about 15 minutes.

4. Bake for about 10 minutes. Reduce the oven to 375F and cook for 15-20 minutes
or until the tart is golden brown around the edges. Serve warm or cold.
