Stir -Fried Vegetables

A light approach to vegetables for supper, served over rice or quinoa with chia seeds sprinkled on top

INGREDIENTS

2 Tbsp vegetable oil
4 cups mixed vegetables(zucchini strips, green beans, sliced onion, cubed eggplant, red and orange Bell pepper strips, cauliflower florets, sliced celery)
1/4 tsp salt

METHOD

Heat oil in a wok or large skillet over high heat until almost smoking. Add the vegetables and cook, tossing as you would a salad, 3 minutes. Sprinkle with salt, tossing, 1 minute longer. Serve immediately.
