Crunchy Cookies

A quick and easy treat

INGREDIENTS

2 1/4 cups blanched almonds
1 1/4 cups granulated sugar
1 3/4 cups of icing sugar
3 tbsp water
1 tbsp of almond oil

Preheat the oven to 400 F. Roast the almonds until golden brown, then chop finely. Caramelize the granulated sugar in a heavy pan, being careful not to let it turn too dark. Mix in the roasted almonds and pour onto a flat surface greased with almond oil. Quickly spread the mixture to a thickness of about 1/8 inch. Before it hardens completely, using a biscuit cutter greased with almond oil, cut into little hearts or other shapes. Mix the confectioners sugar with the water until it takes on the consistency of thick cream. Using a piing bag with the narrowest nazzle possible, decorate the biscuits with a lace style design serve on a platter
