Pasta with Tomato Sauce


This cooked tomato sauce is a classic - it goes well with any pasta.

INGREDIENTS

1 lb pasta, any variety
cashew cheese sauce

Tomato Sauce

2 lb of fresh tomato or 1 3/4 lb of canned plum tomatoes with juice
1 onion, chopped
1 carrot, diced
1 celery stalk, diced
2/3 cup dry white wine
1 fresh parsley sprig
pinch of sugar
1 tbsp chopped fresh oregano
salt and fresh ground pepper
fresh basil sprigs, to garnish


1. To make the tomato sauce, roughly chop the tomatoes, remove the cores, then place the tomatoes in al large saucepan.

2. Put all the remaining sauce ingredients except for the oregano, into a pan with the tomatoes, bring to a boil and simmer, half-covered, for 45 minutes, until very thick, stirring occasionally. Pass through a strainer, or liquidize, then pour through a strainer to remove the tomato seeds. Stir in the chopped oregano. Taste for seasoning.

3. Cook the pasta in plenty of boiled salted water according to manufactures instructions. Drain well.

4. Toss the pasta with the sauce. Serve with the cahew cheese sauce and garnish with basil.
